Gazpacho soup (hl)

Ingredients

1largeCucumber; peeled, finely chopped
1largeGreen pepper; finely chopped
1largeTomato; finely chopped
1largeOnion; finely chopped
1cupTomato juice
2tablespoonsLemon juice
1tablespoonOlive oil
3tablespoonsMedium or hot picante sauce
Salt and pepper; to taste

Directions

Combine chopped vegetables: green pepper, tomato, onion and cucumber in a blender. Blend until smooth. To mixture add liquid ingredients: tomato juice, lemon juice, olive oil and picante sauce. Mix until well blended.

Chill for at least one hour. Serve cold and garnish with additional chopped vegetables on the top if desired.

Yield: 4 1 cup servings
