|5 \N||Tomatoes; peeled, seeded & finely chopped|
|1 \N||Red pepper; finely cut|
|1 \N||Green pepper; finely cut|
|1 small||Onion; finely cut|
|\N \N||Parsley; finely chopped|
|1 \N||Lemon; juice of|
|\N \N||Chopped chives|
|1 \N||Sprigs fresh tarragon (up to)|
|3 tablespoons||White wine vinegar|
|1 \N||Clove garlic; crushed|
|½ \N||Cucumber; peeled & diced|

Hope you like them as much as we do in this house. I'd love to hear from other New Zealanders on this so far it seems that it's just myself & Rayna
Mix all ingedients (except cucumber) in a latge bowl. Chill for at least 2 hours. Add cucumber just before serving. Serves 6-8.
