Garden bounty casserole

Yield: 6 servings

Measure Ingredient
½ pounds Green, yellow wax, or purple beans
2 mediums Carrots
2 mediums Ears of corn
¼ cup Water
¾ cup Shredded Monterey Jack cheese (3 oz.)
½ cup Couscous
¼ cup Milk
¼ cup Shredded Monterey Jack cheese (1 oz.)

Clean beans and bias-cut into i-inch pieces. Thinly bias-slice carrots. Cut corn from cob. In a 1-½ quart microwave-safe casserole combine beans and water. Micro-cook, covered, on 100% (HIGH) 4 to 6 minutes, stirring once. Stir in carrots and corn.

Micro-cook, covered on HIGH 5 to 7 minutes more, stirring once. Stir in ¾ cup of cheese, couscous, milk, ⅛ tsp. salt, and ⅛ tsp.

pepper. Micro-cook, covered, on high 3 to 5 minutes until heated through and vegetables are crisp-tender, stirring once. Top with ¼ cup cheese.
