Far-east rice

Wash 1 cup uncooked rice in a bowl or pan, swishing the grains around in the water with your hand; repeat washing in 3 or 4 changes of water to remove starch on outside of grains. Drain in sieve. Put washed rice in a 2-quart saucepan; add 1½ cups cold water (if any rice clings to sides of pan, scrape down). Cover pan++now you won't lift lid till rice is done. Bring to vigorous boil over high heat.

Turn heat to low as possible; cook 3 minutes. Bring back to boiling; cook 5 minutes while gradually turning heat down. Continue to cook 15 minutes. Remove from heat. Keep pan covered and let steam 7 minutes.

Fluff with chopsticks or fork. Makes 3 cups.
