English honey loaf

Measure Ingredient
2¼ cup Flour; sifted
1 teaspoon Baking powder
1 teaspoon Salt
¾ teaspoon Baking soda
½ teaspoon Cinnamon
½ teaspoon Ground cloves
½ teaspoon Allspice
¼ teaspoon Ground ginger
1 cup Sugar
⅓ cup Shortening
2 \N Eggs
⅓ cup Honey
1½ teaspoon Lemon rind; grated
½ cup Coffee; cool/strong
½ cup Walnuts; chopped

Preheat oven to 350 degrees and grease 9x5x3 pan. Sift together the flour, baking powder, salt, baking soda and spices.

In another bowl, add the sugar gradually to the shortening, creaming well. Add the honey and lemon rind and mix the batter until blended.

Add some coffee and some dry ingredients to the mixture, alternating between the two and blending well after each addition. Add the walnuts and turn the batter into the pan. Bake 55 to 65 minutes or until cake tester or toothpick comes out clean.
