Cucumber salad with dill vinaigrette

Yield: 4 Servings

Measure Ingredient
1 large English cucumber; thinly sliced
½ cup Sweet red onions; thinly sliced
¼ cup Extra virgin olive oil
¼ cup White wine vinegar
¼ cup Fresh dill week
\N \N Salt & freshly ground pepper; to taste

Combine dill and vinegar. Slowly whisk in olive oil. Allow to rest at room temp 30min.

Toss cucumber and onion slices with vinaigrette. Season to taste with S&P.
