Cucumber salad with dill vinaigrette

Ingredients

1largeEnglish cucumber; thinly sliced
½cupSweet red onions; thinly sliced
¼cupExtra virgin olive oil
¼cupWhite wine vinegar
¼cupFresh dill week
Salt & freshly ground pepper; to taste

Directions

Combine dill and vinegar. Slowly whisk in olive oil. Allow to rest at room temp 30min.

Toss cucumber and onion slices with vinaigrette. Season to taste with S&P.
