Cucumber salad with dill vinaigrette

Ingredients

| ½ | cup | Sweet red onions; thinly sliced |
| ¼ | cup | Extra virgin olive oil |
| ¼ | cup | White wine vinegar |
| ¼ | cup | Fresh dill week |
| Salt & freshly ground pepper; to taste | ||
Directions
Combine dill and vinegar. Slowly whisk in olive oil. Allow to rest at room temp 30min.
Toss cucumber and onion slices with vinaigrette. Season to taste with S&P.
