Measure | Ingredient |

1 large | English cucumber; thinly sliced |
½ cup | Sweet red onions; thinly sliced |
¼ cup | Extra virgin olive oil |
¼ cup | White wine vinegar |
¼ cup | Fresh dill week |
\N \N | Salt & freshly ground pepper; to taste |
Combine dill and vinegar. Slowly whisk in olive oil. Allow to rest at room temp 30min.
Toss cucumber and onion slices with vinaigrette. Season to taste with S&P.
