Cucumber dill relish

Ingredients

| ½ | cup | Distilled white vinegar | 
| 4 | teaspoons | Minced fresh dill | 
| 2 | teaspoons | Salt | 
| 1 | teaspoon | Freshly ground pepper | 
| Garnish fresh sprigs dill | ||
Directions
Peel, seed and coarsely grate cucumber; drain thoroughly in strainer. 
Place in medium bowl. Mix in remaining ingredients except dill sprigs. Cover and refrigerate 24 hours. (Can be stored in refrigerator 1 week.) Let stand at room temperature 10 minutes before serving. Garnish with dill.
