Crockpot rice pudding

Yield: 1 Servings

Measure Ingredient
1 cup White rice; (arborio rice is especially good, but any will do)
6 cups Whole milk; (or 5 cups skim, 1 cup cream; I use 4 cups whole milk and 2 cups coconut milk)
¾ cup Sugar
\N \N A couple of cinnamon sticks; (or 12-15 cardamom pods)
\N \N You can also add things like shredded coconut; raisins, pine nuts, unsalted pistachios, whatever!

Add these all to the crockpot and cook for 2 hours or until rice is tender.

You should stir it occasionally and keep an eye on the pot so that it doesn't bubble up towards the end of its cooking time. Other than that it is foolproof!

Add a teaspoon of vanilla extract when you turn off the heat.
