Country rice pudding

Ingredients

| 2 | cups | Rice; cooked |
| 1½ | cup | Milk |
| ⅛ | teaspoon | Salt |
| 3 | Eggs; beaten | |
| 1 | teaspoon | Vanilla |
| ½ | cup | Brown sugar |
| 1 | teaspoon | Butter |
| 1 | teaspoon | Grated lemon rind & juice |
| ½ | cup | Raisins |
| 1 | cup | Crushed cookies |
Directions
Preheat oven to 325F. In a bowl combine two cups cooked rice, milk, salt and remaining ingredients, except the cookies. Blend continously. This is more a folding action to avoid smashing the rice.
