Country rice pudding

Ingredients

2cupsRice; cooked
cupMilk
teaspoonSalt
3Eggs; beaten
1teaspoonVanilla
½cupBrown sugar
1teaspoonButter
1teaspoonGrated lemon rind & juice
½cupRaisins
1cupCrushed cookies

Directions

Preheat oven to 325F. In a bowl combine two cups cooked rice, milk, salt and remaining ingredients, except the cookies. Blend continously. This is more a folding action to avoid smashing the rice.
