1 \N | Green pepper, seeded and chopped |
1 cup | Sliced mushrooms |
1 \N | Clove garlic, minced |
1 \N | Bay leaf |
16 ounces | Can stewed tomatoes |
1½ pounds | Cod fillets |
Saute onion, green pepper, garlic, and mushrooms in oil until soft.
Add bay leaf and tomatoes; simmer 30 minutes. Preheat oven to 350.
Arrange cod in greased baking dish. Remove bay leaf from sauce; pour over fish. Bake 40 minutes; or until fish flakes easily when tested with a fork.
