Classic fudge

Yield: 1 pound

Measure Ingredient
6 tablespoons Cocoa
2 tablespoons Oil
¾ cup Milk
2 cups Sugar
Of salt
2 tablespoons Margarine
1 teaspoon Vanilla

Place cocoa, oil and milk in heavy saucepan. Sir constantly over very low heat until smooth and slightly thickened, about 5 minutes. Add sugar and salt; stir over medium heat until sugar is dissolved and mixture boils. Continue boiling, without stirring, till mixture reaches 234'. Remove from heat; add butter and vanilla. DO NOT STIR.

Cool to lukewarm (110'). Beat until mixture begins to lose its gloss and holds its shape. Pour at once into buttered 8x4-inch loaf pan.

Cool until set; cut into squares. Let stand in pan until firm. Makes 1 pound. Submitted By BARB HARKINS On 11-10-94
