Big game marinade

Yield: 5 cups

Measure Ingredient
3 larges onions, coarsely chopped
4 larges shallots, chopped
3 stalks celery, chopped, tops
1 included.
¾ cup tarragon wine vinegar
1 tablespoon salt
2 cloves garlic, minced
12 crushed peppercorns
2 larges bay leaves, crumbled
1 bottle dry white wine

Put all ingredients in a large saucepan and bring to a boil. Lower heat and simmer for 5 minutes. Cool and pour over game pieces. Makes about 5 cups.
