Big game marinade

Ingredients

3largesonions, coarsely chopped
4largesshallots, chopped
3stalks celery, chopped, tops

¾cuptarragon wine vinegar
1tablespoonsalt
2clovesgarlic, minced
12crushed peppercorns
2largesbay leaves, crumbled
1bottle dry white wine

Directions

Put all ingredients in a large saucepan and bring to a boil. Lower heat and simmer for 5 minutes. Cool and pour over game pieces. Makes about 5 cups.
