Big game marinade

Ingredients

| 3 | larges | onions, coarsely chopped |
| 4 | larges | shallots, chopped |
| 3 | stalks celery, chopped, tops | |

| ¾ | cup | tarragon wine vinegar |
| 1 | tablespoon | salt |
| 2 | cloves | garlic, minced |
| 12 | crushed peppercorns | |
| 2 | larges | bay leaves, crumbled |
| 1 | bottle dry white wine | |
Directions
Put all ingredients in a large saucepan and bring to a boil. Lower heat and simmer for 5 minutes. Cool and pour over game pieces. Makes about 5 cups.
