Banana nut cake #1

Yield: 12 Servings

Measure Ingredient
½ cup Shortening
1½ cup Sugar
2 \N Eggs; beaten
½ cup Buttermilk
1 teaspoon Baking soda
1 cup Mashed bananas
2 cups Flour
½ cup Chopped nuts
1 cup Brown sugar
1 \N Stick butter or margarine
¼ cup Milk
\N \N Powdered sugar


Mix together shortening, sugar & eggs. Add buttermilk, soda, mashed bananas, flour & nuts. Mix well & bake slowly at 350 until done. Makes 3 layers. When cool, top with icing. ICING: Boil brown sugar & butter until it melts. Add milk. Cook 1 minute. Cool. Add enough powdered sugar to make desired spreading consistency.
