Ingredients

| 1 | pounds | Shiitake mushrooms |
| 1 | cup | Peanut oil |
| ¼ | cup | Sesame oil |
| 6 | tablespoons | Soy sauce |
| 1 | cup | Balsamic vinegar |
| 1½ | tablespoon | Garlic; minced |
| 4 | cups | Dikon radish; julienned |
| 4 | cups | Carrots; julienned |
| 4 | cups | Red onion; roasted, julienned |
| 2 | bunches | Green onion; thin bias cut |
| 1 | cup | Jicama; julienned |
| 2 | Juice of lemon | |

STEP 1:
1. Toss all.
2. Grill, Broil, or Saut mushrooms for 3-4 minutes.
3. Cool, then julienne.
STEP 2:
1. Toss all ingredients with julienned mushrooms.
STEP 3:
1. Add lemon juice, DRAIN well before serving.
