Measure | Ingredient |

2 tablespoons | Olive oil |
2 larges | Cloves garlic; sliced |
1 pounds | Shiitake mushrooms; sliced |
2 larges | Tomatoes; peeled, diced |
2 bunches | Arugula; wash well |
½ pounds | Angel hair pasta; cooked |
2 tablespoons | Parmesan cheese; grated |
1 \N | Sprig basil |
Heat oil over high heat until hot. Add garlic and saute until golden brown.
Add mushrooms and saute for 30 seconds or until tender. Add tomato and arugula and combine well. In a serving bowl toss with pasta and top with Parmesan and basil.
