|2½ pounds||Ripe tomatoes|
|2 eaches||Cloves garlic; minced|
|1 tablespoon||Balsamic vinegar|
|2 tablespoons||Olive oil|
|¼ cup||Fresh basil; chopped|
|½ teaspoon||Sea salt|
|\N x||Freshly ground black pepper to taste|
|1 pounds||Angel hair pasta|
PREP TIME: 15 minutes, plus 30 minutes to marinate COOKING TIME: 5 minutes
1. Cut tomatoes in half and squeeze to extract seeds. Finely chop tomatoes.
2. Combine tomatoes with garlic, vinegar, olive oil, basil, salt and pepper in a large bowl. Toss well and let stand at room temperature 30 minutes. Adjust seasonings. 3. Prepare angel hair according to package directions. Rinse and drain well. Toss warm pasta with tomato sauce. Serve immediately with freshly grated Parmesan, if desired.
