Ingredients

3Eggs; well beaten
cupSugar
1cupCorn oil
2cupsGrated raw zucchini; packed; do not peel!
2teaspoonsVanilla
3cupsUnsifted flour
1teaspoonSalt
1teaspoonBaking powder
2tablespoonsGrated orange rind
2teaspoonsCinnamon
½cupRaisins
½cupPecans; chopped

Directions

Sift dry ingredients. Mix with remaining ingredients. Divide batter between 2 greased and floured loaf pans. Bake at 350 degrees F for 45 minutes to 1 hour, or until done.
