Zucchini bread #03

Yield: 16 Servings

Measure Ingredient
3 Eggs; well beaten
1¾ cup Sugar
1 cup Corn oil
2 cups Grated raw zucchini; packed; do not peel!
2 teaspoons Vanilla
3 cups Unsifted flour
1 teaspoon Salt
1 teaspoon Baking powder
2 tablespoons Grated orange rind
2 teaspoons Cinnamon
½ cup Raisins
½ cup Pecans; chopped

Sift dry ingredients. Mix with remaining ingredients. Divide batter between 2 greased and floured loaf pans. Bake at 350 degrees F for 45 minutes to 1 hour, or until done.
