Vierge dressing

Yield: 600 ml

Measure Ingredient
2½ cup Extra virgin olive oil
½ ounce Coriander seeds
1 bunch Tarragon
12 \N Black peppercorns
4 \N Shallots
2 \N Garlic cloves
1 pinch Sea Salt

Preparation:

Crush the coriander seeds, black peppercorns and garlic cloves. Chop the shallots.

1. Warm the olive oil with the coriander seeds in a pan. Place the tarragon, peppercorns, shallots, garlic and salt in a 600ml screw top jar, then pour in the oil and coriander. Screw on the lid and leave to marinate for one week, shaking the bottle daily.
