Yield: 1 Servings
|16 ounces||Can refried beans|
|1 teaspoon||Chili powder|
|1 teaspoon||Ground cumin|
|2 tablespoons||Vegetable oil|
|1 pounds||Turkey breast, cooked, chopped|
|½ cup||Onion, diced|
|4 ounces||Green chili pepper, diced|
|2 tablespoons||Fresh cilantro, chopped|
|1 cup||Tomatoes, finely chopped|
|10½ ounce||Bag nacho chips|
|2 cups||Shredded monterey jack cheese|
Combine beans, chili powder and cumin, heating through.
Heat oil in a skillet. Add turkey, onion, chilies, cilantro, salt and pepper. Cook, stirring occassionally, until onion is tender. Remove from heat and stir in tomato.
Preheat oven to 425. Spread about 1 teaspoon of bean mixture over each chip . Place in a single layer ona greased baking sheet. Spoon about 1 tablesppon of turkey mixture on top of each chip.
Sprinkle cheese evenly over turkey. Bake 5 minutes, or till cheese is melted . Serve immediately
