Tomato-onion soup

2 | tablespoons | Parsley sprigs -- chopped |
2 | teaspoons | Thyme |
1 | Bay leaf | |
1 | teaspoon | Basil |
1 | tablespoon | Tamari soy sauce, low |

Saute onions, leeks, and garlic in ½ cup water until transparent (about 15 minutes). Add the remaining 3½ cups of water, the tomatoes, parsley, thyme, basil, and the bay leaf. Simmer, covered, over low heat for 60 minutes. Remove cover; simmer for 30 minutes longer. Add tamari just before serving.
HELPFUL HINTS: This soup is great with fresh, homemade bread. Add a green salad fro an interesting meal. A large can of tomatoes (28 ounces) may be substituted for fresh tomatoes. Recipe By :
