Tomato-onion soup

2Leek -- sliced thin
1Garlic clove -- pressed
4cupsWater
8largesTomato -- chopped
2tablespoonsParsley sprigs -- chopped
2teaspoonsThyme
1Bay leaf
1teaspoonBasil
1tablespoonTamari soy sauce, low

Directions

Saute onions, leeks, and garlic in ½ cup water until transparent (about 15 minutes). Add the remaining 3½ cups of water, the tomatoes, parsley, thyme, basil, and the bay leaf. Simmer, covered, over low heat for 60 minutes. Remove cover; simmer for 30 minutes longer. Add tamari just before serving.

HELPFUL HINTS: This soup is great with fresh, homemade bread. Add a green salad fro an interesting meal. A large can of tomatoes (28 ounces) may be substituted for fresh tomatoes. Recipe By :
