Tomato-onion soup

Measure Ingredient
2 \N Onion -- diced
2 \N Leek -- sliced thin
1 \N Garlic clove -- pressed
4 cups Water
8 larges Tomato -- chopped
2 tablespoons Parsley sprigs -- chopped
2 teaspoons Thyme
1 \N Bay leaf
1 teaspoon Basil
1 tablespoon Tamari soy sauce, low
\N \N Sodium

Saute onions, leeks, and garlic in ½ cup water until transparent (about 15 minutes). Add the remaining 3½ cups of water, the tomatoes, parsley, thyme, basil, and the bay leaf. Simmer, covered, over low heat for 60 minutes. Remove cover; simmer for 30 minutes longer. Add tamari just before serving.

HELPFUL HINTS: This soup is great with fresh, homemade bread. Add a green salad fro an interesting meal. A large can of tomatoes (28 ounces) may be substituted for fresh tomatoes. Recipe By :
