Tomato arugula salsa

1 pounds Plum tomatoes -- seeded and
Chopped
1 cup Arugula leaves -- chopped
1 tablespoon Minced red onion
½ cup Extra virgin olive oil
1 teaspoon Dijon mustard
2 tablespoons White wine vinegar
2 tablespoons Lemon juice
Salt and pepper

Directions

You can use basil, italian parsley or watercress instead of the arugula.

Chop by hand and combine all ingredients.
