Tomato and chive topping

| ¼ | cup | Dry white wine |
| 1 | large | Tomato; finely chopped |
| 2 | tablespoons | Chopped fresh or frozen chives |
| 2 | tablespoons | Lemon juice |
| ¼ | teaspoon | Salt |
| ⅛ | teaspoon | Pepper |
| Fresh chives; for garnish | ||
Directions
Cook shallot and garlic in oil in a large skillet over medium-high heat, stirring constantly, 1 minute. Add wine, and cook until reduced by half.
Stir in tomato, chopped chives, and next 3 ingredients. Spoon over salmon or other fish and serve immediately. Garnish if desired. Makes about 1 cup.
