3 \N | Minced garlic cloves |
¼ cup | Basil - chopped |
2 pounds | Roma tomatoes - seeded and diced |
12 slices | Toasted country bread, cut crosswise |
In a bowl, combine oil, garlic, basil and tomatoes. Season with salt and pepper. Spoon about 2 Tbs. of tomato topping on each toast. Arrange on platter and serve. For variations: Add chopped olives, pimentos or chopped artichoke hearts.
