Tomato and basil bruschetta

Measure Ingredient
¼ cup Olive oil
3 \N Minced garlic cloves
¼ cup Basil - chopped
2 pounds Roma tomatoes - seeded and diced
12 slices Toasted country bread, cut crosswise

In a bowl, combine oil, garlic, basil and tomatoes. Season with salt and pepper. Spoon about 2 Tbs. of tomato topping on each toast. Arrange on platter and serve. For variations: Add chopped olives, pimentos or chopped artichoke hearts.
