Sweet and sour cukes

Yield: 1 servings

Measure Ingredient
2 larges Cukes; peeled, (if there is wax on it) and thinly sliced
3 Green onions; thinly sliced with 3 inches of green tops
⅔ cup Rice vinegar
⅓ cup Sugar; ( I use fructose- so maybe a 1/4 cup is okay)

Combine ingredients; marinade for at least a half hour and serve. Serves 4.

Per Serving: 47 calories, .07g protein, 12g carbohydrates, 1.2g fiber, 0.2g fat, 4 mg sodium.
