Swedish chicken salad

Quantity Ingredient
3 cups Diced cold, cooked chicken
½ cup Mayonnaise
cup Sour cream
2 To 3 tsps. curry powder Salt, pepper to taste Crisp lettuce leaves, washed and dried
2 Hard-cooked eggs, shelled and cut into wedges
6 Stuffed olives, sliced
2 tablespoons Capers, drained
3 tablespoons Finely chopped dill pickles

This curry-flavored chicken salad, called honssallad, is a Swedish smorgasbord specialty, but it may also be served as a luncheon entree.

Combine chicken with mayonnaise, sour cream, and curry powder. Season with salt

and pepper and mix well. Refrigerate 1 hour or longer to blend flavors. When

ready to serve, arrange lettuce leaves on a platter and spoon salad over them. Decorate with remaining ingredients.

SERVES 4 TO 6.
