Southwestern chicken salad

Yield: 6 servings

Measure Ingredient
1 pack Perdue Fit 'n Easy Chicken
Tenders
2 tablespoons Olive oil -- divided
Salt -- to taste
Pepper -- to taste
½ cup Fresh lime juice
1 small Red onion
¼ cup Fresh cilantro
½ each Jalapeno pepper -- seeded
2 cups Cantaloupe -- dried, ripe
1 large Avocado -- peeled/seeded/dic
1 cup Apple -- peeled and diced
1 Head Romaine lettuce

Brush chicken with 1 tablespoon oil and sprinkle lightly with salt and pepper. Grill or broil 6-8 inches from heat source for 2-3 minutes perside until cooked through. Dice and reserve. In a food processor combine lime juice, onion, cilantro, and jalapeno. Process until finely chopped.

Gradually add oil with machine running. Season to taste with salt and pepper. In a salad bowl toss chicken, melon, avocado and jicama with dressing. Serve on a bed of Romaine lettuce leaves.
