Thai-style chicken salad

Ingredients

| 1 | Cucumber, peeled, seeded and shredded | |
| 2 | cups | Fresh bean sprouts |
| 2 | Fresh jalapeno chilies, seeded and minced | |
| ½ | small | Red onion, sliced thin and separated into rings |
| 1 | tablespoon | Minced fresh ginger root |
| Lime-Mint Dressing | ||
| ½ | cup | Chopped fresh cilantro (leaves and stems) |
| ¼ | cup | Chopped peanuts, toasted |
Directions
In a large bowl, mix chicken, cucumber, bean sprouts, chilies, onion and ginger root. Toss with Lime-Mint Dressing. Gently toss in cilantro. Serve immediately, sprinkled with peanuts.
NOTE: If not serving immediately, refrigerate ingredients and dressing separately. Toss just before serving.
