Summertime meatloaf

Yield: 1 Loaf

Measure Ingredient
1½ pounds Ground beef, lean
½ cup Ketchup
½ cup Tomato juice
½ teaspoon Salt and black pepper
⅓ teaspoon Red pepper
2 Eggs, beaten
¼ cup Bread crumbs
¼ cup Onions, finely chopped
2 teaspoons Prepared mustard
¼ cup Ketchup
½ cup Prepared mustard
2 teaspoons Brown sugar
Fresh herbs for garnish, opt

TOPPING:

In large bowl combine ketchup, tomato juice, salt, black and red pepper, eggs, bread crumbs, onion and mustard. Mix until thoroughly blended. Add ground beef, mix gently but thoroughly. Line a 9 x 5 inch loaf pan with foil. Press in the beef mixture. In a separate bowl, combine the topping ingredients, mixing well. Spread topping over the meat loaf. Bake at 400øF for 35 - 45 minutes or until done.
