Summertime meatloaf

Ingredients

| ½ | cup | Ketchup | 
| ½ | cup | Tomato juice | 
| ½ | teaspoon | Salt and black pepper | 
| ⅓ | teaspoon | Red pepper | 
| 2 | Eggs, beaten | |
| ¼ | cup | Bread crumbs | 
| ¼ | cup | Onions, finely chopped | 
| 2 | teaspoons | Prepared mustard | 
| ¼ | cup | Ketchup | 
| ½ | cup | Prepared mustard | 
| 2 | teaspoons | Brown sugar | 
| Fresh herbs for garnish, opt | ||
Directions
           TOPPING:
In large bowl combine ketchup, tomato juice, salt, black and red pepper, eggs, bread crumbs, onion and mustard. Mix until thoroughly blended. Add ground beef, mix gently but thoroughly. Line a 9 x 5 inch loaf pan with foil.  Press in the beef mixture.  In a separate bowl, combine the topping ingredients, mixing well. Spread topping over the meat loaf. Bake at 400øF for 35 - 45 minutes or until done. 
Drain off fat. Rest meatloaf 5 minutes before serving.  Garnish with fresh herbs, if desired. Yield: 1 loaf Typed in MMFormat by cjhartlin@... Source: Cook for a Cure Cookbook.
