Yield: 1 Loaf
|1½ pounds||Ground beef, lean|
|½ cup||Tomato juice|
|½ teaspoon||Salt and black pepper|
|⅓ teaspoon||Red pepper|
|2 \N||Eggs, beaten|
|¼ cup||Bread crumbs|
|¼ cup||Onions, finely chopped|
|2 teaspoons||Prepared mustard|
|½ cup||Prepared mustard|
|2 teaspoons||Brown sugar|
|\N \N||Fresh herbs for garnish, opt|
In large bowl combine ketchup, tomato juice, salt, black and red pepper, eggs, bread crumbs, onion and mustard. Mix until thoroughly blended. Add ground beef, mix gently but thoroughly. Line a 9 x 5 inch loaf pan with foil. Press in the beef mixture. In a separate bowl, combine the topping ingredients, mixing well. Spread topping over the meat loaf. Bake at 400øF for 35 - 45 minutes or until done.
