Yield: 8 Servings
|2 pounds||Lean ground turkey|
|3 tablespoons||Worcestershire sauce|
|2 tablespoons||Dijon mustard|
|2 \N||Eggs; or 1/2 cup egg substitute|
|\N \N||Salt and pepper|
|1½ cup||Bread crumbs|
|1 tablespoon||Parsley; fresh or dried|
|1 small||Onion; diced|
|½ \N||Green bell pepper; diced|
|1 tablespoon||Minced garlic|
Saute onion and pepper with garlic unitl tender, set aside. Combine turkey with remaining ingredients and mix well. |Add in onion and green peppers.
Shape into loaf and place in a shallow baking dish or loaf pan. Bake at 350 F. for 45 minutes to 1 hour. Halfway through baking, glaze meatloaf with either honey mustard, barbecue suace or catsup.
