Today's meatloaf

Ingredients

2poundsLean ground turkey
3tablespoonsWorcestershire sauce
2tablespoonsDijon mustard
2Eggs; or 1/2 cup egg substitute
Salt and pepper
cupBread crumbs
1tablespoonParsley; fresh or dried
1smallOnion; diced
½Green bell pepper; diced
1tablespoonMinced garlic

Directions

Saute onion and pepper with garlic unitl tender, set aside. Combine turkey with remaining ingredients and mix well. |Add in onion and green peppers.

Shape into loaf and place in a shallow baking dish or loaf pan. Bake at 350 F. for 45 minutes to 1 hour. Halfway through baking, glaze meatloaf with either honey mustard, barbecue suace or catsup.

Serves 8.
