Spiced yogurt marinade

Ingredients

¼ | cup | Safflower oil |
2 | Cloves garlic, minced | |
2 | Tomatoes, peeled, seeded and finely chopped | |
1 | Onion, minced | |
2 | tablespoons | Chopped fresh coriander or parsley |
1 | tablespoon | Finely chopped fresh gingerroot |
2 | teaspoons | (approx) curry powder |
½ | teaspoon | Freshly ground pepper |
Directions
Combine all ingredients, adding more curry powder, if desired; mix well.
