Spiced yogurt marinade

2 Cups

Ingredients

cupPlain yogurt
¼cupSafflower oil
2Cloves garlic, minced
2Tomatoes, peeled, seeded and finely chopped
1Onion, minced
2tablespoonsChopped fresh coriander or parsley
1tablespoonFinely chopped fresh gingerroot
2teaspoons(approx) curry powder
½teaspoonFreshly ground pepper

Directions

Combine all ingredients, adding more curry powder, if desired; mix well.
