Curry-yogurt marinade

2Scallions, thinly sliced
½cupCilantro coarsely chopped
teaspoonGround coriander seeds
¼teaspoonGround cumin seeds
½teaspoonGround ginger
¼teaspoonGround allspice
¼teaspoonGround turmeric
1teaspoonCrushed red pepper flakes
1teaspoonSalt
½teaspoonPepper

Directions

Combine all the ingredients in a nonreactive dish or in a zip-top plastic bag. Turn the chicken breasts during marinating to distribute the flavors evenly. For best results, marinate for 4-6 hours in the refrigerator.

Makes enough for 2 whole chicken breasts.
