South of the border sandwiches

1tablespoonChopped green chilies
cupSalsa
1eachGreen onion, sliced
2tablespoonsSliced ripe olives
dashSalt
dashPepper
dashGround cumin
1cupShredded cheddar cheese (4 oz.)
4eachesFrench OR submarine rolls, split

Directions

In a large bowl, mix eggs, chilies, salsa, onion, olive and seasonings. Fold in cheese. Spoon ½ cup onto bottom of rolls.

Replace tops; wrap each sandwich tightly in foil. Bake at 350 degrees for 20 minutes. Serves 4. SOURCE:* Taste of Home Magazine, Feb./Mar.
