South of the border sandwiches

Yield: 4 servings

Measure Ingredient
2 eaches Hard cooked eggs, chopped
1 tablespoon Chopped green chilies
⅓ cup Salsa
1 each Green onion, sliced
2 tablespoons Sliced ripe olives
\N dash Salt
\N dash Pepper
\N dash Ground cumin
1 cup Shredded cheddar cheese (4 oz.)
4 eaches French OR submarine rolls, split

In a large bowl, mix eggs, chilies, salsa, onion, olive and seasonings. Fold in cheese. Spoon ½ cup onto bottom of rolls.

Replace tops; wrap each sandwich tightly in foil. Bake at 350 degrees for 20 minutes. Serves 4. SOURCE:* Taste of Home Magazine, Feb./Mar.
