Sloppy joe

Ingredients

1smallOnion, chopped
4eachesGarlic cloves, minced
1tablespoonVegetable oil
3largesMushrooms, chopped
1largeCarrot, grated
½tablespoonParsley
½poundsTofu, crumbled
2teaspoonsTamari
3tablespoonsTomato sauce

Directions

Saute onion & garlic in oil till transluscent. Add pepper, mushrooms, carrot & parsley. Stir fry briefly & add tofu, tamari & tomato sauce. Cook till well heated through. Stuff into pita bread & serve.
