Serious pecan pie

1 | 9 Inch Pie Shell -- partially baked | |
⅓ | cup | Butter Or Margarine -- melted |
⅔ | cup | Brown Sugar -- packed |
3 | larges | Eggs |
1 | cup | Dark Corn Syrup |
1¼ | cup | Pecans, Broken Or Slightly Chopped |
1 | tablespoon | Rum |
½ | teaspoon | Salt |
Directions
1. Preheat oven to 450 F.
2. Bake the empty pie shell about 8 mins. Allow to cool while preparing filling. Reduce oven temperature to 375 F.
3. In a mixing bowl, cream the butter and brown sugar. Beat in the eggs, one at a time, until smooth. Stir in the corn syrup, pecans, rum, and salt, blending thorouhgly.
4. Pour the mixture into the pie shell. Bake for 40 to 45 mins, or until a knife inserted into the filling comes out clean. Serve warm with vanilla ice cream. Also good served cold, though much chewier.
