Scrumptious morning glory muffins

Yield: 14 Servings

Measure Ingredient
2 cups All purpose flour
1¼ cup Sugar
½ teaspoon Salt
2 teaspoons Baking soda
2 teaspoons Cinnamon
2 cups Carrots; grated
½ cup Raisins
½ cup Coconut
1 \N Whole apple; peeled & cored & gra
3 \N Whole egg
1 cup Oil
2 teaspoons Vanilla

Mix first five ingredients. Stir in the next four ingredients. In another bowl, beat eggs, oil and vanilla. Stir into the flour mixture until batter is "just" combined. Spoon into well-greased muffin cups, fill to top. Bake at 350 deg F for 20 minutes.
