Glorious morning cheesy bacon muffins

Yield: 12 Servings

Measure Ingredient
1 cup Quick or Old-Fashioned Oatmeal
1½ cup Flour
1¼ cup Processed cheese food; shredded
3 tablespoons Sugar
1 tablespoon Baking powder
½ teaspoon Chili powder
½ teaspoon Salt; (opt.)
¼ teaspoon Pepper; coarsely ground
½ pounds Bacon; cooked & crumbled
⅓ cup Oil
¼ cup Egg substitute
1 cup Skim milk

Preheat oven to 400. Grease muffin tin well. In large bowl combine oats, flour, sugar, baking powder and seasonings; set aside. In another bowl, combine oil, egg substitute and skim milk. Make a well in center of dry mixture. Pour wet ingredients into dry ingredients; stir until just moistened. Gently fold in bacon and cheese. Portion muffin batter evenly into prepared muffin tin (about ⅓ cup). Bake about 20-25 minutes or until lightly golden brown.
