Ingredients

1cupWhite cabbage, shredded
1cupCucumber, grated
1eachRed bell pepper, sliced in circles
1eachMango, peeled, stoned, slice
5eachesScallions, chopped
1eachAvocado, peeled & sliced
1eachGarlic clove, crushed
Juice of 2 lemons
5tablespoonsOlive oil
1eachHandful watercress
Salt & pepper

Directions

First, arrange the cabbage, cucumber, bell pepper, mango & scallions in a salad bowl. Now put in half the avocado slices. Then blend the garlic with the lime or lemon juice, olive oil & salt & pepper. Pour half the dressing over the vegetables & mango & toss.

Now arrabge the watercress & remaining avocado slices on top & drizzle the rest of the dressing over before serving.
