Bayou salad

2 | cups | Cooked rice |
1 | cup | Celery; sliced |
½ | cup | Cherry tomatoes; quartered |
⅓ | cup | Ripe olives; sliced |
⅓ | cup | Green pepper; diced |
½ | cup | Fat-free Italian salad dressing |
Lettuce leaves |
Combine all ingredients except lettuce in large bowl. Serve on lettuce leaves. Yield: Serves 6
