Bayou salad

Yield: 6 Servings

Measure Ingredient
1 pounds Crawfish; cooked and peeled
2 cups Cooked rice
1 cup Celery; sliced
½ cup Cherry tomatoes; quartered
⅓ cup Ripe olives; sliced
⅓ cup Green pepper; diced
½ cup Fat-free Italian salad dressing
\N \N Lettuce leaves

Combine all ingredients except lettuce in large bowl. Serve on lettuce leaves. Yield: Serves 6
