Creole rice salad

Yield: 1 Servings

Measure Ingredient
3 cups Cooked rice
4 Hard cooked eggs, chopped
1 cup Crisp fried bacon, crumbled
½ cup Chopped sour pickles
2 tablespoons Olive oil
½ cup Chopped celery
12 cups Chopped onions
½ cup Chopped shallots
½ cup Mayonnaise
1 tablespoon Vinegar

Mix all ingredients and chill before serving. Will serve 10 to 12.
