Creole rice salad

4Hard cooked eggs, chopped
1cupCrisp fried bacon, crumbled
½cupChopped sour pickles
2tablespoonsOlive oil
½cupChopped celery
12cupsChopped onions
½cupChopped shallots
½cupMayonnaise
1tablespoonVinegar

Directions

Mix all ingredients and chill before serving. Will serve 10 to 12.
