Directions
: (2 peeled, 1 unpeeled, both : diced)
1½ c plain yogurt
½ c finely chopped fresh mint 1 TB lemon juice
: Salt and pepper
Mix together the cucumbers, yogurt, mint, and lemon juice. Season to taste with salt and pepper. Cover and refrigerate until ready to serve.
