Porter house hot cakes

Yield: 18 servings

Measure Ingredient
2 cups Flour
2 tablespoons Sugar
4 teaspoons Baking Powder
½ teaspoon Salt
2 \N Eggs -- beaten
2 cups Milk
2 tablespoons Butter -- melted
½ teaspoon Vanilla
\N drop Yellow Food Coloring

Sift flour, sugar, baking powder and salt together in a mixing bowl.

Combine eggs, milk, melted butter, vanilla, and food coloring and whisk until smooth. Make a well in dry ingredients and add the liquid, beating rapidly until well moistened.

Coat griddle with vegetable spray and heat to medium high. Bake on hot griddle until bubbles appear, then flip. Cook other side until golden brown. Makes 18 three-inch hot cakes.
