Griddle cakes^

Measure Ingredient
1 pint Flour
1 cup Milk
1 tablespoon Baking powder
½ teaspoon Sugar
½ teaspoon Salt

Sift together well the dry ingredients. Add milk to make a soft batter; bake immediately on a hot griddle. Should be ⅛" when baked.

Serve smothered in butter and maple syrup. these are the best plain hot griddle cakes without eggs and are light, tender and healthful.

Many of the recipes in this collection did not contain amounts or oven temperatures. I have typed them in as they appear in the book, typos and all.
