1teaspoonBaking soda
1cupPersimmon pulp
cupSifted flour
1teaspoonCinnamon
½teaspoonSalt
½cupChopped walnuts
½cupChopped raisins (optional)

Directions

From: japlady@... (Rebecca Radnor) Date: Tue, 20 Dec 1994 18:53:45 +0000 Blend eggs, sugar and oil together. Mix the soda into the persimmon pulp.

Add to sugar mixture. Sift flour with cinnamon and salt. Add coarsely chopped nuts to the flour mixture. Fold into the persimmon mixture. Pour batter into oiled 3-by-4-by-9-inch pan. Bake at 325 degrees for 1 hour and 15 minutes.
