Peanut sauce - microwave

Measure Ingredient
1 tablespoon Unsalted Butter
2 \N Minced Shallots
1 cup Chunky Peanut Butter
1 cup Water
6 tablespoons Fresh Lime Juice
1 tablespoon Minced Fresh Ginger
½ teaspoon Oriental Chili Sauce *
¼ teaspoon Coconut Extract
2 tablespoons Oriental Sesame Oil

* Use oriental chili sauce with garlic.

~--------------------------------------------------------------------- ~-- Microwave butter and shallots in a medium microwave safe bowl, covered with plastic wrap, on high power for 1 minute or until butter is melted. Stir in remaining ingredients except oil until blended.

Microwave covered for 4 minutes on medium power or until mixture is well softened. Stir in oil. If sauce is too thick, thin with water.

Serve warm or at room temperature with crisp cooked vegetables or broiled chicken, or as a sauce for satay ( grilled skewered meat, poultry or fish). Makes 1-¼ cups. 366 calories per ¼ cup. From: Syd's Cookbook.
