cupSugar
1tablespoonBaking powder
½teaspoonSalt
¼cupShortening -- melted
2eachesEggs -- lightly beaten
1cupMilk
6tablespoonsButter or margarine
1cupPacked brown sugar -- plus 2
Tbs
3cupsRipe peaches -- sliced
Peeled

Directions

In a mixing bowl, combine flour, sugar. baking powder and salt. Add shortening, eggs and milk; mix until smooth. In the bottom of 18 greased muffin cups, place 1 teaspoon of butter and 1 tablespoon brown sugar. Place in a 375 deg oven for 5 minutes. Arrange peaches in the muffin cups. Fill each half full with batter. Bake at 375 deg for 25 minutes or until browned. Turn out of pans immediately. Yield: 1-½ dozen
