Peach jam - country living

Ingredients

2cupsChopped peeled peaches
3tablespoonsSugar
1tablespoonCornstarch
¼teaspoonGround ginger
¼teaspoonGround allspice
Pinch salt (opt.)
1teaspoonFresh lemon juice

Directions

1. In 1-quart microwave-safe bowl; combine peeled peaches, sugar, cornstarch, ginger, allspice, and salt, if desired. Microwave on high (100 percent), uncovered, 3 minutes.

2. Stir mixture well and microwave on high 3 to 4 minutes or until mixture thickens. With fork, coarsely mash any large chunks of fruit and stir until mixture is spreadable.

3. Stir lemon juice into jam and set aside to cool slightly; cover and refrigerate several flours or overnight, allowing mixture to thicken.
