2½ cup | Orange juice |
¾ cup | Sugar |
½ teaspoon | Ground cinnamon |
¼ teaspoon | Ground ginger |
1 tablespoon | Lemon juice |
1. In large microwave-safe bowl, combine apricots, orange juice, and sugar. Cover tightly with lid or microwave-safe plastic wrap.
Microwave on high (100 percent) 12 minutes.
2. In food processor or blender, puree apricot mixture with cinnamon, ginger, and lemon juice until smooth. Spoon apricot jam into jars and refrigerate or cool to room temperature and spoon into plastic bags and freeze.
Peach Jam: Substitute dried peaches for the apricots and apple juice for the orange juice.
