Original hush puppy recipe

Yield: 1 Servings

Measure Ingredient
1 cup Self rising flour
2 cups Self rising cornmeal
3 tablespoons Sugar
½ tablespoon Baking powder
4 tablespoons Oil
2 \N Eggs; beaten
1 large Onion; finely chopped
1 \N Jalapeno pepper; finely chopped or ground in food processor optional
1 cup Buttermilk

Combine flour, cornmeal, sugar and baking powder in a large bowl and mix well. Combine oil, eggs, onion, pepper and buttermilk, stirring well. Add to dry mixture and mix well. Batter will be stiff. Use 2 tablespoons of batter (or an ice cream scoop) to form each hush puppy. Drop into hot oil (350°) and fry approximately 4 minutes or until brown. Yield: 20-25 hush puppies
