Oklahoma chicken loaf

Yield: 6 Servings

Measure Ingredient
4 cups Cooked; diced chicken
1 cup Rice; cooked
¼ cup Pimento; diced
1 tablespoon Grated onion
2 cups Soft bread crumbs
1 cup Milk
2 cups Rich chicken broth
4 Eggs
1 teaspoon Salt
¼ teaspoon Pepper

Combine ingredients & place in a 2-quart baking dish. Bake at 325 until firm, about 1 hour. Cut into squares & serve with giblet gravy. (May be made with turkey, but add more broth.) BETTY JO DIAL
