Oatmeal-raisin muffin mix

Measure Ingredient
1 cup Old-fashioned oats
½ cup Sugar
½ cup Flour
¼ cup Whole-wheat flour
2 tablespoons Dry buttermilk powder
1 teaspoon Baking powder
1 teaspoon Orange peel
½ teaspoon Baking soda
¼ teaspoon Salt
1 cup Raisins

Place oats in a food processor; process till coarsely ground. Add sugars, flour, buttermilk powder, baking powder, orange peel, baking soda, and salt; pulse process just until well blended. Stir in raisins. Store in an airtight container. To serve: Preheat oven to 400. Combine muffin mix, ½ cup water, ⅓ cup oil, and 2 eggs, stir just until moistened. Fill lightly greased muffin cups about three-fourths full. Bake 15 to 20 minutes or until a toothpick inserted in center of muffin comes out clean.
